Premium Dicentrarchus labrax raised in clean, deep-water marine cages along the Aegean coastline. Known for sweet, delicate white flesh, low fat, and culinary versatility.

European sea bass (Dicentrarchus labrax) is the species Turkish Mediterranean aquaculture is built on, and the Aegean coast around Milas and the Gulf of Güllük grows most of the national volume. VARS sources from open-sea cage farms there, certified to ASC and GlobalG.A.P — certificates that belong to the farm, not to VARS.

It is a lean, delicately flavoured fish with firm white flesh that portions cleanly, which is why it carries both the retail counter and the restaurant plate. Fish is harvested against a confirmed order rather than drawn from stock, chilled on flake ice at 0–2 °C and flown out within days; consolidation through İzmir is what puts it in Europe, the Gulf or East Asia the day after it leaves the water.

Continuous production across 52 weeks makes supply a scheduling question rather than a seasonal one, and standing weekly volumes are the normal arrangement for distributor and HORECA accounts. Every consignment carries a health certificate, a batch certificate of analysis, a certificate of origin and the commercial documents, with TRACES pre-notification for the EU and SFDA-compliant Halal documentation for the Gulf.
